Method

Mix crumbs and butter, press into a 9 inch springform.

Beat cream cheese smooth, slowly add sugar then eggs one at a time.

Stir in sour cream, vanilla and lemon zest.

Bake in a water bath at 325F for 65 minutes, cool slowly, chill overnight.
