Method

Soak bulgur in cold water 20 minutes, drain very well.

Finely chop parsley, mint and scallions by hand for the best texture.

Toss everything with diced tomato, bulgur, lemon, olive oil and salt.

Rest 15 minutes so the bulgur soaks up the dressing before serving.
