Pan seared salmon glazed with a homemade teriyaki of mirin, sake and soy until lacquered.

Method

Reduce soy, mirin, sake, sugar and ginger to a syrupy glaze.

Pat salmon dry, sear skin side down for 4 minutes until crisp.

Flip, baste with teriyaki for 2 minutes more.

Plate over rice, drizzle remaining glaze and finish with sesame seeds.
