Method

Roast sweet potatoes until very soft, peel and mash smooth.

Whisk in eggs, brown sugar, bourbon, milk and spices.

Pour into a blind baked pie shell.

Bake at 350F for 50 minutes until the center barely jiggles. Cool to set.
