Collard Greens with Bacon

Strip greens from the stems, tear into pieces and wash twice.

Render bacon in a Dutch oven, soften onion and garlic in the fat.

Add stock, ham hock and greens, simmer 75 minutes until silky.

Finish with cider vinegar and red pepper flakes. Serve with the pot likker.
