Brine chicken in buttermilk and hot sauce overnight.

Mix flour with paprika, garlic powder and cayenne for the dredge.

Dredge wet chicken, dip back into buttermilk, dredge again.

Fry in 350F oil 12 minutes per side until deep golden and 165F inside.
