Method

Simmer pork with onion and garlic for 90 minutes until tender.

Toast chiles, soak in hot water, blend with garlic and broth for a deep red puree.

Strain puree into the pot, add hominy and simmer 30 minutes more.

Serve in bowls topped with shredded cabbage, sliced radish, oregano and lime.
