Method

Toss apples with sugar, cinnamon, cornstarch and lemon. Let macerate 20 minutes.

Line a deep dish pan with pastry, fill with apples and dot with butter.

Lay lattice strips over the top, brush with egg wash, dust with turbinado sugar.

Bake at 425F for 20 minutes, then 350F for 50 minutes until juices bubble.
