For the three accompaniments, pick a sweet, a salty and a sour. A spoon of honeycomb, a handful of marcona almonds, a small jar of pickled cherries. Add a small mountain of bread and a few sturdy crackers, two knives, and let people make their own bites. That is the whole brief.
